Arugula Salad with Toasted Herbed Goat Cheese

Makes 4 servings
2 teaspoons mustard
1 tablespoon honey
1 clove garlic, crushed
¼ cup balsamic vinegar
2 tablespoons olive oil
1 4.5 ounce package Celebrity Garlic & Fine Herbs Goat Cheese, sliced into 8 rounds
¼ cup breadcrumbs
2 tablespoons butter
8 cups arugula
1 pint grape tomatoes, halved
1 cup pitted calamata olives, halved
½ cup pine nuts toasted
Combine mustard, honey, garlic and vinegar in a small bowl. Slowly whisk in oil. Season with salt, if desired. Set aside.
Coat both sides of Goat Cheese rounds with breadcrumbs, pressing crumbs firmly into Goat Cheese. Heat butter in large skillet over medium heat. Add Goat Cheese rounds and cook 1 to 2 minutes on each side until golden.
Combine remaining ingredients and arrange on 4 salad plates. Top each with 2 Goat Cheese rounds and serve with dressing.
